Study, research and continuous updating. It is the path towards a conscious, sustainable agriculture aimed at maintaining the flavours and health aspects of food. Today our company manages about 40,000 olive trees scattered between Trevi and Spoleto – the so-called Fascia Olivata Assisi-Spoleto, the Colli Martani and the area of Lake Trasimeno. The typical and present varieties are Moraiolo, Frantoio, Leccino, San Felice and Dolce Agogia and characterize the oil produced in an unmistakable way. But that is not all.

The historical moment in which we live reminds us of it every day. Climate change underway should be thought of not as simple statistical data, but as a real process of losing a cultural heritage, traditions and values that are at the base of our civilization. They are traditions on which we have built our memories, lived and passed on our affections.
Even more those who work in the agri-food sector, like us, have the duty to contribute in their own small way, adopting respectful and sustainable processing methods. The goal is to create productive ecosystems for the benefit of all. We did it!

Moreover, technology is a powerful tool for applying these projects.

We are therefore proud to present our 4.0 Sustainable Olive Grove:

The new project: Gaudenzi 4.0

The project develops and starts respecting the three P’s:

Panorama, Product, Production.

This allows us to have a diversified varietal heritage and to respect the cultural connotation of the territory.

In this project we recover existing olive groves and introduce new ones.
The new sustainable olive groves that we have planned are divided into small farms. Each of them has its own specific cultivar along with rows of pollinators, rows of fruit trees to increase the biodiversity due to pollination and lastly, green manure of clover and aromatic plants to enrich even more the ecosystem we are creating. All the farms are
inserted in a context delimited also by wooded areas, each olive grove is oriented according to the direction and periodicity of the winds.

All the farms have been designed with roads, compressed air ducts, sub-irrigation and drainage systems. All sustainable olive grove management takes place thanks to a state-of-the-art technological network indispensable for plant management, for real-time monitoring and for the creation of blends directly from trees.

All the cultivars we are going to plant are 100% organic farming.

From today we will have all the typical DOP of Umbria available: Dolce Agogia, Nostrale di Rigali, San Felice, Rajo, Pendolino, Leccino, Frantoio, Rosciola.

Each decision will be taken in real time both for the management of the plants and for the profile of the blend to be made. All this thanks to technology: a weather station with live webcam and a drone to fly on the farms. This is to collect important data on the plants and to manage their criticalities.
